What is the difference between “Beef, round, top round, steak, separable lean only, trimmed to 1/8″ fat, select, raw” and “Beef, round, top round, steak, separable lean and fat, trimmed to 1/8″ fat, select, raw”?

They’re the same product; however, “separable lean and fat” includes the nutrient values for the 1/8″ fat trim around the steak, while “separable lean” does not. Some people prefer to cut off all the fat trim before eating, while others leave it on because they like the taste of fat. So there are two sets of values for both people—same product.

You would expect that a product that includes fat will have a higher total fat value and a higher total calorie value, and this is true.
